HUMMUS TOAST - QUINOA

The most delicious hummus with zucchine and crispy quinoa. This hummus is low calorie and some may say its not a hummus as it does not have tahini. But to me its delicious and helped me cut back on dairy!
1 slice Sourdough
2 tbsp Hummus
Sliced zucchini thin
Pesto oil
Crispy Quinoa

1. Slice the zucchine thin and pan fry without oil
2. In a separate pan cook the quinoa with oil and salt until crispy.
3. Remove zucchini slices and rest aside with drizzle oil.
4. Toast the toast.
5. Dollop hummus on toast.
6. Scrunch up zucchine pretty style.
7. Drizzle quinoa and pesto oil.
8. ENJOY
Please enjoy this hummus on toast it is the absolute joy! I ate this for 2 weeks straight!
