DOUGH BALLS OF YOUR GF DREAMS

So at times you just get lucky in life and find someone who posts the perfect GF Focaccia recipe, ie the Loopy Whisk, so inspired by her wonderfully easy method and recipe here is a spin of her recipe to make the most delicious dough balls!


Serves 24 dough balls


TIPS:


  • Sieve in the psyllium husk into water and whisk to avoid it becoming lumpy

  • Leave the mixed dough to sit for 5 so it will be easier to work it

  • Measure out everything in grams on the scale to make your life easier



INGREDIENTS:


  • 20g - Psyllium Husk

  • 540g - Warm Water

  • 10 g - EVO oil (1tbsp)

  • 20g - Apple Cider Vinegar (2 tbsp)

  • 160g - Rice Flour

  • 155g - Cornflour

  • 110g - Oat Flour

  • 10g - Instant Yeast

  • 20g - Sugar

  • 8g - Salt




METHOD:


  1. Mix Psyllium with Water in a pyrex jug or similar, it will form a gel.

  2. Add EVO oil and Apple Cider Vinegar and set aside

  3. In a large bowl mix the Flours, Salt, Yeast and Sugar

  4. Make a well and pour in the wet mix

  5. Mix well with a wooden spoon and leave for 5 min. This helps it become more malleable and less sticky

  6. Pour content on worktop (do not add flour) and start to work the dough into a ball

  7. Spread into a baking tray and cover to let rise for 30 min

  8. Put oven on at 200 degrees

  9. Now the ball shaping, take a bowl of water and a new large baking tray where you will fit your balls, take two if you need.

  10. Line the baking trays with oven paper

  11. Dip the hands in the water and rip a bit of dough about a heaped tbsp worth, should fit nicely in your palm and create a ball, you can make this bigger and smaller but the cooking time will be affected.

  12. Place the dough balls in a tray with a bit of distance from one another and leave to proof for a further 30 min covered.

  13. After proofing they will have connected with each other and thats ok! Now time to bake.

  14. Add to oven and bake on the lowest tray for 35 -40 min or until golden, take one to test with a stick, the inside should be cooked and doughy!

  15. Enjoy however you like but I made a garlic and herb butter and it was amazing!
